Sugar-Free Strawberry Ice Cream Cups

Ingredients

  • 2 cups fresh strawberries, chopped
  • 1 cup heavy whipping cream
  • 1 cup unsweetened Greek yogurt or cream cheese
  • 3–4 tbsp powdered erythritol or monk fruit sweetener
  • 1 tsp vanilla extract
  • A few strawberry pieces for topping

Instructions

  1. Wash and chop the strawberries.
  2. Blend strawberries with sweetener and vanilla until smooth.
  3. In a bowl, whip the heavy cream until fluffy.
  4. Fold in the yogurt or softened cream cheese.
  5. Add the strawberry mixture and stir gently.
  6. Pour into cups or a freezer-safe container.
  7. Freeze for 3–4 hours until creamy and firm.
  8. Top with fresh strawberry pieces before serving.
