Ingredients
- 1 lb smoked sausage, sliced into rounds
- 1½ lbs baby potatoes, halved or quartered
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and black pepper, to taste
- 1½ cups shredded cheddar cheese
- 2 tbsp chopped parsley (optional)
Instructions
- Preheat oven to 400°F (200°C). Grease a baking dish or line with foil.
- In a large bowl, toss the potatoes with olive oil, garlic, Italian seasoning, paprika, salt, and pepper.
- Spread the potatoes into the baking dish and bake for 25 minutes.
- Remove from the oven, add the sliced smoked sausage, and stir gently.
- Sprinkle shredded cheddar cheese evenly over the top.
- Return to the oven and bake another 15–20 minutes, until the potatoes are tender and the cheese is melted and bubbly.
- Garnish with chopped parsley and serve hot.
