Ingredients
- 2 cups mixed dried fruits(raisins, cranberries, chopped dates, candied fruit)
- 1½ cups milk
- 1½ cups self-raising flour
- ½ cup brown sugar
- 1 tsp vanilla extract
(Optional: sprinkle sugar on top before baking for the caramelized crust.)
 Instructions
- Soak the fruit
- Place the dried fruits in a bowl.
- Pour the milk over them.
- Let them soak for 30–60 minutes (this makes the cake soft and moist).
- Prepare the batter
- Preheat oven to 180°C / 350°F.
- Add brown sugar and vanilla to the fruit mixture.
- Stir well.
- Add flour
- Mix in the self-raising flouruntil combined.
- The batter will be thick.
- Bake
- Pour the mixture into a greased cake pan.
- Bake for 40–50 minutes until golden brown and firm.
- Cool and serve
- Let it cool for 10–15 minutes.
- Slice and enjoy for breakfast with coffee or tea .
