Crispy Cheesy Herb Bites with Creamy Dip

Ingredients (for the bites)

  • 2 cups broccoli florets (finely chopped & lightly steamed)
  • 1 cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • ½ cup breadcrumbs (panko works best)
  • 1 egg
  • 2 cloves garlic (minced)
  • 2 tbsp fresh herbs (parsley, dill, or chives)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • ½ tsp onion powder

 Instructions

  1. Prep broccoli
    Steam lightly (2–3 mins), then finely chop and squeeze out excess moisture.
  2. Mix everything
    In a bowl, combine broccoli, cheeses, breadcrumbs, egg, garlic, herbs, and spices.
  3. Form bites
    Roll into small balls (about 1–1.5 inches).
  4. Coat (optional but recommended)
    Roll in extra breadcrumbs or Parmesan for extra crispiness.
  5. Cook
    • Oven: Bake at 400°F (200°C) for 20–25 mins, flipping halfway
    • Air fryer: 375°F (190°C) for 12–15 mins
    • Pan-fry: Cook in a little oil until golden on all sides

 Creamy Dip

Option 1: Garlic Aioli

  • ½ cup mayonnaise
  • 1 clove garlic (minced)
  • 1 tbsp lemon juice
  • Salt to taste

Option 2: Cheesy Dip (like in the image)

  • ½ cup heavy cream
  • ½ cup shredded cheese
  • 1 tbsp butter
  • Pinch of garlic powder

Heat gently until smooth and creamy.

 Tips

  • Don’t skip squeezing moisture out of broccoli—this keeps them crispy
  • Add a little mozzarella inside for that melty center
  • Swap broccoli for zucchini or cauliflower if you want variety
